Ingredients
  

  • 1 lb chicken tenders
  • 2 tbsp olive oil
  • 1 large apple Honeycrisp or Fuji, thinly sliced
  • ¼ cup honey
  • ½ cup apple cider or apple juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp cinnamon optional, for warmth
  • 1 tbsp unsalted butter for extra richness, optional
  • Fresh thyme or parsley for garnish

Instructions
 

  • Prepare the Chicken: Pat the chicken tenders dry with a paper towel. Season with salt, pepper, and garlic powder.
  • Sauté the Chicken: Heat olive oil in a large skillet over medium heat. Add chicken tenders and cook for about 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
  • Make the Glaze: In the same skillet, add apple cider, honey, soy sauce, Dijon mustard, apple cider vinegar, and cinnamon. Stir well and bring to a gentle simmer.
  • Add the Apples: Stir in the sliced apples and let them soften slightly, about 3-4 minutes.
  • Glaze the Chicken: Return the chicken to the pan, coating each tender with the apple-honey glaze. Let simmer for 3-5 minutes until the sauce thickens and fully coats the chicken.
  • Finish & Serve: Optionally, add a tablespoon of butter for extra richness. Garnish with fresh thyme or parsley and serve warm.
