  • 2 ripe bananas mashed
  • 1/2 cup cottage cheese small curd preferred
  • 2 eggs
  • 1 cup flour whole wheat for added nutrition
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp honey or maple syrup optional, for sweetness
  • Butter or oil for cooking

Instructions
 

  • Prepare the batter: In a large mixing bowl, mash the bananas until smooth. Add cottage cheese and eggs, whisking until fully combined.
  • Mix dry ingredients: In a separate bowl, combine flour, baking powder, and salt.
  • Combine wet and dry ingredients: Gradually fold the dry ingredients into the wet mixture, stirring gently to combine (do not overmix).
  • Cook the pancakes: Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  • Serve: Serve with fresh fruit, honey, or maple syrup for extra sweetness.
