Ingredients
  

For the Dough:

  • 2 ¼ tsp 1 packet active dry yeast
  • ¾ cup warm water about 110°F/45°C
  • 1 tsp sugar
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp olive oil

For the Toppings:

  • ½ cup pizza sauce or tomato sauce optional
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • ½ cup cooked breakfast sausage or crumbled bacon
  • ½ cup diced bell peppers
  • ¼ cup sliced red onions
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish optional

Instructions
 

Step 1: Make the Dough

  • In a small bowl, combine warm water, yeast, and sugar. Let sit for 5–10 minutes until foamy.
  • In a large bowl, mix the flour and salt. Add the yeast mixture and olive oil.
  • Stir until a dough forms, then knead for 5–7 minutes until smooth and elastic.
  • Cover with a towel and let rise for 1 hour, or until doubled in size.

Step 2: Preheat and Prepare

  • Preheat your oven to 450°F (230°C).
  • Roll out the dough into a 10–12-inch circle and place it on a baking sheet or pizza stone.

Step 3: Assemble the Pizza

  • Spread a thin layer of pizza sauce (optional) over the dough.
  • Sprinkle mozzarella cheese evenly.
  • Add cooked sausage or bacon, bell peppers, and onions.
  • Crack 4 eggs directly onto the pizza, spacing them out.
  • Season with salt and pepper.

Step 4: Bake

  • Bake for 12–15 minutes, or until the crust is golden, cheese is melted, and egg whites are set but yolks are still soft.

Step 5: Garnish and Serve

  • Remove from oven and sprinkle with fresh herbs if desired.
  • Slice and enjoy warm!
