Ingredients
  

  • 2 boneless skinless chicken breasts
  • 8 oz 225 g penne or spaghetti pasta
  • 2 cups cherry tomatoes halved
  • 2 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Optional: balsamic glaze for drizzling

Instructions
 

  • Cook the pasta: Boil a pot of salted water and cook pasta according to package directions. Drain and set aside.
  • Prepare the chicken: Season chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook chicken for 5-6 minutes per side, or until golden brown and cooked through. Remove from skillet and let rest.
  • Make the bruschetta topping: In a bowl, combine cherry tomatoes, garlic, basil, 1 tablespoon olive oil, and a pinch of salt and pepper. Stir to combine.
  • Combine pasta and toppings: Slice the cooked chicken. Toss pasta with the bruschetta mixture and top with sliced chicken.
  • Finish and serve: Sprinkle with Parmesan cheese and drizzle with balsamic glaze if desired. Serve warm and enjoy!
