Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 4 cups cauliflower rice fresh or frozen
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic minced
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup chopped parsley optional, for garnish

Instructions
 

Preheat the Oven

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Sauté the Aromatics

  • In a skillet, heat olive oil over medium heat. Add chopped onions and garlic. Cook until soft and fragrant (about 3–4 minutes).

Prepare the Casserole Mixture

  • In a large mixing bowl, combine cauliflower rice, cooked chicken, sautéed onions and garlic, sour cream, cheddar cheese, Parmesan, paprika, salt, and pepper. Mix well until everything is evenly coated.

Assemble in the Baking Dish

  • Spread the mixture evenly in the prepared baking dish.

Bake

  • Bake uncovered for 25–30 minutes or until the casserole is hot and bubbly and the top is golden.

Garnish and Serve

  • Remove from the oven, let cool slightly, and sprinkle with chopped parsley before serving (optional).
