  • 24 pre-made phyllo cups or 1 package of phyllo dough
  • 8 oz goat cheese or cream cheese for a milder flavor
  • 1 cup fresh cranberries or ½ cup dried cranberries
  • 2 tbsp honey or maple syrup for a vegan option
  • 1-2 tbsp sugar optional, if using fresh cranberries
  • 2 tbsp olive oil or melted butter for brushing the phyllo
  • Fresh thyme or rosemary for garnish
  • Optional: ¼ cup chopped walnuts or pecans for crunch

Instructions
 

Prepare the Phyllo Cups

  • If using pre-made phyllo cups: Skip this step.
  • If using phyllo dough:
  • Preheat oven to 375°F (190°C).
  • Cut phyllo dough into 24 squares and press into a greased mini muffin tin.
  • Lightly brush with melted butter or olive oil.
  • Bake for 5-7 minutes until golden and crispy.

Make the Cranberry Sauce

  • In a small saucepan over medium heat, combine fresh cranberries, honey, and sugar (if using).
  • Cook for 8-10 minutes until cranberries burst and form a thick sauce.
  • Let cool slightly before assembling.

Assemble the Phyllo Cups

  • Spoon 1 tsp of goat cheese into each phyllo cup.
  • Top with a small spoonful of cranberry sauce.
  • Drizzle with honey or balsamic glaze for extra flavor.

Bake and Garnish

  • Bake for 8-10 minutes at 375°F until warm and crispy.
  • Remove from the oven and let cool slightly.
  • Garnish with fresh thyme or rosemary.
