Ingredients
  

  • 1 lb fresh salmon fillet skin removed, cut into bite-sized cubes
  • 1 cup all-purpose flour
  • ½ cup cornstarch
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne pepper optional, for heat
  • 1 large egg
  • ½ cup buttermilk
  • 1 cup panko breadcrumbs for extra crispiness
  • Vegetable oil for frying
  • Lemon wedges for serving
  • Fresh parsley or chives for garnish

Instructions
 

Prepare the Salmon:

  • Pat the salmon pieces dry with a paper towel. Set aside.

Make the Coating Mixture:

  • In a bowl, whisk together the flour, cornstarch, salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.

Prepare the Wet Batter:

  • In a separate bowl, whisk the egg and buttermilk until well combined.

Bread the Salmon:

  • Dip each salmon bite into the flour mixture, shaking off excess.
  • Dip it into the buttermilk-egg mixture.
  • Coat it again with the flour mixture for an extra crispy texture.
  • (Optional: For extra crunch, press into panko breadcrumbs after flour coating.)

Heat the Oil:

  • In a deep skillet or frying pan, heat about 2 inches of vegetable oil to 350°F (175°C).

Fry the Salmon Bites:

  • Carefully place the coated salmon pieces in the hot oil. Fry for about 2-3 minutes per side, or until golden brown and crispy.

Drain and Serve:

  • Remove the fried salmon bites with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Garnish & Serve:

  • Serve warm with lemon wedges and garnish with fresh parsley or chives. Pair with your favorite dipping sauces like tartar sauce, garlic aioli, or spicy sriracha mayo.
