Ingredients
  

  • 2-3 fillets of Matjes herring young pickled herring
  • 2 soft rolls Brötchen or small crusty rye bread slices
  • 1 small onion thinly sliced
  • Fresh dill chopped (about 1-2 tbsp)
  • Mustard or butter optional
  • Pickles optional, for garnish
  • Hard-boiled egg slices optional, for garnish

Instructions
 

Prepare the Herring:

  • Drain the Matjes herring from its brine and gently pat it dry with paper towels. If the fillets are large, you can cut them into smaller pieces.

Prepare the Bread:

  • Slice the rolls or rye bread in half. If you’re using rye bread, you may want to toast it lightly for a crisp texture. Spread a thin layer of mustard or butter on the inside of each bread slice, depending on your preference.

Assemble the Sandwich:

  • Place the Matjes herring fillets on the bottom half of the bread.
  • Add the thinly sliced onions evenly on top of the herring.
  • Sprinkle fresh dill over the onions and herring for extra flavor.

Optional Garnishes:

  • Add pickles and hard-boiled egg slices if desired for extra flavor and texture.

Finish and Serve:

  • Top the sandwich with the other half of the bread. Press gently, and your Matjesbrötchen is ready to serve!
