- 12 oz 340 g penne pasta
- 2 tablespoons olive oil
- 1 lb 450 g boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper to taste
- 3 cups broccoli florets
- 3 cloves garlic minced
- 1/2 teaspoon red pepper flakes optional
- 1/2 cup chicken broth
- 1/2 cup heavy cream or half-and-half
- 1/3 cup grated Parmesan cheese
- Zest of 1 lemon optional, for brightness
Cook the Pasta:
In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. In the last 2 minutes of cooking, add the broccoli florets to the same pot. Drain and set aside.
Sauté the Chicken:
While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the pan. Sauté until golden brown and cooked through, about 5–7 minutes. Remove and set aside.
Serve:
Taste and adjust seasoning with extra salt, pepper, or cheese if desired. Serve hot, optionally garnished with extra Parmesan and fresh herbs.
