- 2 boneless skinless chicken breasts (sliced in half lengthwise to make 4 cutlets)
- 1 cup breadcrumbs Italian seasoned or plain + 1 tsp Italian seasoning
- ½ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 large egg
- ½ cup all-purpose flour
- 1 cup marinara sauce store-bought or homemade
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil or parsley optional, for garnish
Bread the Chicken:
Set up three bowls:
One with flour
One with the beaten egg
One with breadcrumbs mixed with grated Parmesan cheese
Dredge each chicken cutlet in flour, then egg, then breadcrumb mixture. Press to coat evenly.
Pan-Fry the Chicken:
Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and cook for about 3–4 minutes per side, until golden and cooked through. Remove and set aside.
Assemble for Baking:
Preheat your oven to 425°F (220°C).
Place chicken cutlets on a baking sheet or oven-safe dish. Spoon marinara sauce over each piece, then top with shredded mozzarella.
