Ingredients
  

  • 2 boneless skinless chicken breasts (sliced in half lengthwise to make 4 cutlets)
  • 1 cup breadcrumbs Italian seasoned or plain + 1 tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 large egg
  • ½ cup all-purpose flour
  • 1 cup marinara sauce store-bought or homemade
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley optional, for garnish

Instructions
 

Prep the Chicken:

  • Slice the chicken breasts in half lengthwise to create thin cutlets. Season with salt and pepper on both sides.

Bread the Chicken:

  • Set up three bowls:
  • One with flour
  • One with the beaten egg
  • One with breadcrumbs mixed with grated Parmesan cheese
  • Dredge each chicken cutlet in flour, then egg, then breadcrumb mixture. Press to coat evenly.

Pan-Fry the Chicken:

  • Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and cook for about 3–4 minutes per side, until golden and cooked through. Remove and set aside.
  • Assemble for Baking:
  • Preheat your oven to 425°F (220°C).
  • Place chicken cutlets on a baking sheet or oven-safe dish. Spoon marinara sauce over each piece, then top with shredded mozzarella.

Bake:

  • Bake for 10 minutes or until the cheese is melted and bubbly.

Garnish & Serve:

  • Sprinkle with chopped basil or parsley if desired. Serve hot with pasta, salad, or crusty bread.
