Ingredients
  

  • 2 medium cucumbers thinly sliced
  • 2 large tomatoes diced
  • ½ small red onion thinly sliced
  • ½ cup crumbled feta cheese
  • ¼ cup sliced black olives optional
  • 2 tbsp fresh parsley or basil chopped
  • For the Dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine or balsamic vinegar
  • 1 tsp honey optional
  • Salt & black pepper to taste

Instructions
 

Prepare the vegetables:

  • Wash and dry the cucumbers, tomatoes, and herbs.
  • Slice the cucumbers and tomatoes into bite-sized pieces.
  • Thinly slice the red onion and chop the fresh herbs.

Make the dressing:

  • In a small bowl, whisk together the olive oil, vinegar, honey, salt, and pepper until emulsified.

Combine the salad:

  • In a large bowl, combine cucumbers, tomatoes, red onion, feta cheese, olives (if using), and herbs.
  • Drizzle the dressing over the salad and toss gently to combine.
