Ingredients
  

  • 1 lb 450g boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 packet Ros Dee Thai Chicken Seasoning Soup Mix Powder
  • 4 cups 960ml chicken broth or water
  • 1 cup 240ml coconut milk (optional for a creamier soup)
  • 2 tablespoons fish sauce adjust to taste
  • 1 tablespoon sugar optional, for a slight sweetness
  • 1 medium onion thinly sliced
  • 2 cloves garlic minced
  • 1- inch piece of ginger thinly sliced
  • 2-3 Thai bird's eye chilies sliced (optional for heat)
  • 1 stalk lemongrass bruised and cut into 2-inch pieces (optional)
  • 1 cup mushrooms sliced (optional)
  • 1 medium tomato chopped
  • Fresh cilantro and lime wedges for garnish

Instructions
 

Prepare the Ingredients:

  • Slice the chicken, onion, garlic, ginger, and lemongrass (if using). Chop the tomato and mushrooms (if using). Set all the ingredients aside.

Cook the Aromatics:

  • In a large pot, heat a tablespoon of oil over medium heat. Add the sliced onion, garlic, and ginger. Sauté for about 2-3 minutes until fragrant and softened.

Add the Chicken:

  • Add the chicken pieces to the pot and cook for about 5 minutes, stirring occasionally, until the chicken is lightly browned on all sides.

Add the Broth:

  • Pour in the chicken broth (or water) and bring to a gentle boil. Add the packet of Ros Dee Thai Chicken Seasoning Soup Mix Powder, stirring well to dissolve the seasoning evenly.

Simmer the Soup:

  • Reduce the heat and let the soup simmer for 10-15 minutes, allowing the chicken to cook through and the flavors to develop. If using, add the coconut milk and stir.

Flavor Adjustments:

  • Taste the soup and adjust the seasoning if needed by adding fish sauce, sugar, or extra chilies for more heat.

Add Vegetables:

  • Add the chopped tomato and mushrooms (if using) to the soup. Let it simmer for another 5 minutes, or until the vegetables are tender.

Serve:

  • Ladle the soup into bowls. Garnish with fresh cilantro and a squeeze of lime juice. Serve hot and enjoy!
