- 1 packet Ros Dee Thai Chicken Seasoning Soup Mix Powder
- 4 cups 960ml chicken broth or water
- 1 cup 240ml coconut milk (optional for a creamier soup)
- 2 tablespoons fish sauce adjust to taste
- 1 tablespoon sugar optional, for a slight sweetness
- 1 medium onion thinly sliced
- 2 cloves garlic minced
- 1- inch piece of ginger thinly sliced
- 2-3 Thai bird's eye chilies sliced (optional for heat)
- 1 stalk lemongrass bruised and cut into 2-inch pieces (optional)
- 1 cup mushrooms sliced (optional)
- 1 medium tomato chopped
- Fresh cilantro and lime wedges for garnish
Prepare the Ingredients:
Slice the chicken, onion, garlic, ginger, and lemongrass (if using). Chop the tomato and mushrooms (if using). Set all the ingredients aside.
