Ingredients
  

  • 1 ½ cups of fine or medium grind cornmeal
  • 1 cup of buttermilk
  • ¼ cup of beef tallow melted
  • 2 large eggs
  • 1 tbsp of baking powder
  • 1 tsp of salt
  • Optional: 1-2 tbsp of sugar for a touch of sweetness

Instructions
 

Preheat the Cast Iron Skillet:

  • Place your cast iron skillet in the oven and preheat to 400°F (200°C). Add 1-2 tbsp of beef tallow to the skillet, and let it heat up in the oven for about 5 minutes. This helps create the crispy crust.

Prepare the Batter:

  • In a medium bowl, mix together the cornmeal, baking powder, and salt. In a separate bowl, whisk together the buttermilk, eggs, and melted beef tallow.

Combine Wet and Dry Ingredients:

  • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be a little lumpy don't overmix!

Bake:

  • Carefully remove the hot skillet from the oven. Pour the cornbread batter into the skillet, spreading it out evenly. Return the skillet to the oven and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool & Serve:

  • Allow the cornbread to cool for about 5-10 minutes before slicing. Serve warm with butter, honey, or your favorite topping!
