Ingredients
  

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 cup frozen strawberries partially thawed and drained
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.
  • In a large bowl, mix flour, sugar, baking powder, and salt.
  • In another bowl, whisk milk, oil, egg, and vanilla.
  • Pour wet ingredients into dry ingredients. Stir gently until just combined.
  • Fold in frozen strawberries carefully to avoid breaking them.
  • Divide batter evenly into muffin cups.
  • Bake for 20-25 minutes, or until a toothpick comes out clean.
  • Let cool before serving.
