🐔 For the Chicken:
- 2 large boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Juice of 1/2 lime
🌽 For the Street Corn:
- 2 ears of corn or 1 ½ cups of corn kernels
- 1 tablespoon mayonnaise
- 1 tablespoon crème fraîche or sour cream
- 1 tablespoon crumbled cotija or feta cheese
- 1/2 teaspoon chili powder optional
- Juice of 1/2 lime
🍚 For the Rice:
- 1 cup basmati or jasmine rice
- 2 cups water or chicken broth
- 1 tablespoon chopped fresh cilantro
- Juice of 1/2 lime
- Salt to taste

Step 1: Cook the Rice
Rinse the rice under cold water until the water runs clear.
In a pot, bring water or broth to a boil. Add the rice and a pinch of salt.
Reduce heat, cover, and simmer for 15 minutes, or until the liquid is absorbed.
Remove from heat, let it rest for 5 minutes, then fluff with a fork. Stir in lime juice and chopped cilantro.
Step 2: Cook the Chicken
In a small bowl, combine olive oil, paprika, cumin, garlic powder, salt, and pepper.
Rub the spice mix all over the chicken breasts.
Grill or pan-sear the chicken for 5–6 minutes per side, or until fully cooked.
Squeeze lime juice over the chicken, then slice into strips.
Step 3: Make the Street Corn
Grill or dry-sear the corn until lightly charred.
In a bowl, combine the corn with mayonnaise, crème fraîche, cheese, chili powder, and lime juice.
Step 4: Assemble the Bowl
Place a bed of rice in each bowl.
